Ingredients
- 1 lb. chicken breasts, cubed ½ inch, boneless, skinless
- 3 Tbsp. Chef Merito® Adobo para Carne al Pastor
- 3 roma tomatoes, diced
- 3 Tbsp. red onion, finely chopped
- 1 Tbsp. olive oil
- ¼ cup green onions, thinly sliced
- 1 (15 oz.) can black beans, drained
- 1 (8.75 oz.) can corn kernels, drained
- 2 romaine lettuce hearts or iceberg lettuce
Preparation
- In a medium bowl, combine chicken and Chef Merito® Adobo para Carne al Pastor. Cover and refrigerate for 15 minutes.
- In a small bowl, combine diced tomatoes and chopped red onion. Set aside.
- Heat oil in a large saucepan over medium-high heat, and sauté the marinated chicken for 10 minutes until the liquid has reduced.
- Add green onions, beans, and corn. Continue cooking for an additional 30 seconds.
- Remove from heat and allow the mixture to rest for 5 minutes.
- Spoon the warm chicken mixture onto lettuce leaves and top with the tomato and onion mixture.
