Ingredients
- 1 lb. flat iron steak, ¾ inch thick
- 2 tsp. Chef Merito® Steak & Meat Seasoning or Chef Merito® Fajitas Seasoning
- 1 bell pepper (red, orange, yellow, and/or green), sliced ½ inch wide
- 2 yellow onions, sliced ½ inch thick
- 1 Tbsp. olive oil
- 8 (6-inch) flour tortillas
Preparation
- Coat the grill rack with non-stick cooking spray. Preheat the grill to medium heat (300°F-350°F).
- Season the steak with Chef Merito® Steak & Meat Seasoning in a Ziplock® bag and shake to cover the meat completely.
- Brush the onions and bell pepper with olive oil and place them directly on the grill. Cook until tender.
- Stack the tortillas and wrap them loosely in foil; set aside.
- Grill the steak, covered, for 5-8 minutes per side or until the desired doneness (145°F for medium-rare).
- During the last 5 minutes of grilling, place the foil packet on the grill to warm the tortillas.
- Transfer the steak and vegetables to a cutting board; let them stand for 3 minutes.
- Thinly slice the steak against the grain; cut the pepper and onions into thinner slices.
- Serve with the warmed tortillas.
