Lemon Pepper Cookies

Ingredients

  • 1 cup unsalted butter, softened (2 sticks)
  • 1 cup granulated sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • Lemon zest
  • 3 cups all-purpose flour
  • 1¼ tsp. Chef Merito® Lemon Pepper
  • 2 tsp. baking powder

Preparation

  1. In a large bowl, cream together the butter and sugar until light and fluffy (about 3 minutes).
  2. Add the egg, vanilla extract, and lemon zest. Continue mixing for an additional 30 seconds.
  3. In another large bowl, combine the flour, Chef Merito® Lemon Pepper, and baking powder.
  4. Gradually add the dry ingredients to the butter mixture and mix on low speed until a dough is formed.
  5. Flatten the dough into a disk and wrap in plastic. Refrigerate for one hour.
  6. Remove dough from refrigerator and let stand at room temperature until soft enough to roll out.
  7. Preheat oven to 375 degrees F.
  8. Roll dough to ½ inch thickness and cut into desired shapes.
  9. Place onto ungreased baking sheet, allowing 2 inches of space between each cookie.
  10. Bake for 10-12 minutes or until edges begin to brown. The tops should be pale in color.
  11. Cool and decorate as desired.
