Ingredients
- 1 lb. seared fresh Mahi Mahi
- 1 tsp. Chef Merito® Fish Seasoning
- 2 Tbsp. olive oil
- 2 oz. Cotija cheese, grated
- ¼ cup red cabbage, finely chopped
- 4-6 corn or flour tortillas
- ½ tsp. Chef Merito® Black Pepper Seasoning
Toppings:
- ¼ cup cilantro, finely chopped
- 1 tomato, chopped
- ½ avocado, sliced
- Chipotle Mexican sour cream or regular sour cream to taste
Preparation
- Prepare the toppings first. Finely chop the red cabbage and cilantro. Chop the tomatoes to your liking and grate the cotija cheese. Set aside until the fish is ready to be garnished.
- Season both sides of the Mahi Mahi with Chef Merito® Fish Seasoning and Chef Merito® Black Pepper.
- Add olive oil to a sauté pan and heat to medium/low heat.
- Sear the Mahi Mahi on each side for 3 to 4 minutes and remove when opaque and firm to the touch.
- Warm the tortillas.
- Place the Mahi Mahi on the tortillas and garnish with red cabbage, tomatoes, avocado, cotija cheese, and add the Chipotle Mexican or regular sour cream to your liking. Serve and enjoy!
