Roasted Pumpkin

Ingredients

  • 1 pumpkin (3 pounds)
  • 4 tbsp extra virgin olive oil
  • Several sprigs of thyme
  • 2 tbsp pumpkin seeds
  • 2 tsp Chef Merito® Fajitas seasoning
  • 2 tablespoons sour cream
  • Cilantro leaves

Preparation

  1. Scoop out the seeds and fibers from the pumpkin.
  2. Cut pumpkin into medium/thick wedges and place them skin side down in a roasting pan.
  3. Drizzle the wedges with olive oil, scatter the thyme and pumpkin seeds. Season with Chef Merito® Fajitas seasoning.
  4. Bake in a preheated oven at 425°F for 40-45 minutes until wedges are tender and roasted.
  5. Serve with sour cream and cilantro leaves.
