Ingredients
- 4 cups baby spinach
- 8 grape or cherry tomatoes, cut in quarters
- ¼ cup red onion, finely chopped
- 1 cup crumbled goat or feta cheese
- 2 Tbsps. olive oil or vegetable oil to taste
- 1 Tbsp. Chef Merito® Lime juice
- 1 tsp. Chef Merito® Sal, Chile y Limón, or to taste
Preparation
- In a small bowl, mix olive oil, Chef Merito® Lime juice, and Chef Merito® Sal, Chile y Limón. Reserve.
- Remove longer stems of spinach, wash, and pat dry.
- Place spinach in a bowl big enough for all ingredients.
- Cut tomatoes in quarters and add to spinach.
- Add onion, cheese, dressing, and mix.
- Serve with warm tortilla chips and enjoy!
