Baked Fish Fillets

Ingredients

Fish Fillets

  • 1 lb. Fish Fillets, tilapia or cod
  • 1 cup Chef Merito® Bread Crumbs
  • ¼ cup Chef Merito® Lime Juice
  • 1 lime, cut into wedges

Rice

  • 1 cup rice
  • 2 Tbsp. Chef Merito® Lime Juice
  • ¼ cup cilantro, chopped

Preparation

  1. Preheat the oven to 380ºF.
  2. Place ¼ cup Chef Merito® Lime Juice and 1 cup Chef Merito® Bread Crumbs on shallow plates.
  3. Dip the fish fillets, one by one, in lime juice and then roll in bread crumbs until completely covered on all sides.
  4. Arrange the fillets on a greased oven-safe dish or cookie sheet.
  5. Bake for 10-12 minutes, then carefully turn the fillets over and bake for another 10-12 minutes until golden brown.
  6. Meanwhile, cook the rice and season it with 2 Tbsp. Chef Merito® Lime Juice.
  7. Garnish the rice with chopped cilantro and serve alongside the fish fillets with lime wedges.
