Ingredients
Fish Fillets
- 1 lb. Fish Fillets, tilapia or cod
- 1 cup Chef Merito® Bread Crumbs
- ¼ cup Chef Merito® Lime Juice
- 1 lime, cut into wedges
Rice
- 1 cup rice
- 2 Tbsp. Chef Merito® Lime Juice
- ¼ cup cilantro, chopped
Preparation
- Preheat the oven to 380ºF.
- Place ¼ cup Chef Merito® Lime Juice and 1 cup Chef Merito® Bread Crumbs on shallow plates.
- Dip the fish fillets, one by one, in lime juice and then roll in bread crumbs until completely covered on all sides.
- Arrange the fillets on a greased oven-safe dish or cookie sheet.
- Bake for 10-12 minutes, then carefully turn the fillets over and bake for another 10-12 minutes until golden brown.
- Meanwhile, cook the rice and season it with 2 Tbsp. Chef Merito® Lime Juice.
- Garnish the rice with chopped cilantro and serve alongside the fish fillets with lime wedges.
