Ingredients
- 1 lb. Rotini, multi-color or plain (or pasta of your choice)
- ½ cup Butter
- ½ cup Green Onions, chopped
- ¼ cup Parsley, chopped
- 1 Tbsp. Chef Merito® Garlic Powder
- ¾ cup Crema Oaxaca or sour cream
- ½ lb. Cotija cheese (or Parmesan or Romano cheese)
- 8 oz. Philadelphia cream cheese
- 6 oz. Chef Merito® Fajitas Marinade
- 2-4 Small tomatoes, for garnish
Preparation
- Follow the instructions for cooking the pasta of your choice. Drain and set aside.
- In a saucepan, melt the butter. Add the chopped green onion, parsley, and Chef Merito® Garlic Powder.
- Stir for approximately one minute, then add the Chef Merito® Fajitas Marinade.
- Stir again for one minute, then add the cream cheese and stir until completely melted.
- Add the Crema Oaxaca and Cotija cheese, stirring until the ingredients have blended together.
- Toss the sauce with the pasta and serve. Garnish with extra parsley and small tomatoes.
Suggestions:
Add a little water if the sauce gets too thick. Serve with chicken, fish, or a green salad.
