Fajita-Style Pasta

Ingredients

  • 1 lb. Rotini, multi-color or plain (or pasta of your choice)
  • ½ cup Butter
  • ½ cup Green Onions, chopped
  • ¼ cup Parsley, chopped
  • 1 Tbsp. Chef Merito® Garlic Powder
  • ¾ cup Crema Oaxaca or sour cream
  • ½ lb. Cotija cheese (or Parmesan or Romano cheese)
  • 8 oz. Philadelphia cream cheese
  • 6 oz. Chef Merito® Fajitas Marinade
  • 2-4 Small tomatoes, for garnish

Preparation

  1. Follow the instructions for cooking the pasta of your choice. Drain and set aside.
  2. In a saucepan, melt the butter. Add the chopped green onion, parsley, and Chef Merito® Garlic Powder.
  3. Stir for approximately one minute, then add the Chef Merito® Fajitas Marinade.
  4. Stir again for one minute, then add the cream cheese and stir until completely melted.
  5. Add the Crema Oaxaca and Cotija cheese, stirring until the ingredients have blended together.
  6. Toss the sauce with the pasta and serve. Garnish with extra parsley and small tomatoes.

Suggestions:

Add a little water if the sauce gets too thick. Serve with chicken, fish, or a green salad.
