Ingredients
- 2 lbs. "Chamorro" Beef Shank, cubed
- 2 Zucchinis
- 3 Carrots
- 1 Chayote
- 2 Corn
- 2 Tomatoes
- ½ Bunch Cilantro
- ½ Onion, chopped
- 2 Limes
- 1 can Tomato Puree
- 1 Cup Chef Merito® Meat Marinade
Preparation
- Marinate the meat with the Chef Merito® Meat Marinade for 30 minutes.
- In a large pot, bring a gallon of water to a boil.
- In a blender, mix a cup of the tomato puree with 2 tomatoes. Add this mixture to the pot.
- Once the water is boiling, add the marinated meat and maintain a low boil.
- Chop the zucchinis, carrots, chayote, and corn, then add them to the pot. Cook until all ingredients are tender and fully cooked.
- Chop the onion and cilantro, and serve them with the soup, along with lime wedges for added flavor.
