Carne Asada Nacho Helmet

Ingredients

  • 1 lb. Flap or Skirt steak
  • 1 Tbsp. Chef Merito® Steak & Meat Seasoning
  • ¼ cup vegetable oil
  • ½ bag of tortilla chips
  • 1-16 oz. can black beans
  • ½ cup salsa, mild
  • ½ cup sour cream
  • 2 green onions or jalapeño peppers, chopped

Chef Merito® Nacho Sauce

  • 2 Tbsp. flour
  • 2 Tbsp. butter
  • ½ tsp. Chef Merito® Chicken Seasoning
  • 1 cup whipping cream
  • 1 ½ cups Sharp Cheddar Cheese

Preparation

  1. Sprinkle Chef Merito® Steak & Meat Seasoning on the meat.
  2. Preheat a skillet or grill using oil to prevent sticking. Cook the meat at medium heat for 4-5 minutes on each side or until cooked through.
  3. Remove from heat and let sit for 5 minutes. Slice the meat into small pieces and set aside.
  4. In a saucepan, mix butter and flour on low heat until it forms a paste (roux).
  5. Add whipping cream, cheddar cheese, and Chef Merito® Chicken Seasoning. Mix on low heat until the cheese has melted and the sauce comes to a simmer. Remove from heat.
  6. In a skillet, pour in the black beans and mash with a potato masher. Cook until warm.
  7. Arrange tortilla chips in a serving dish. Spoon a generous amount of cheese sauce over the chips, then cover with beans and the sliced meat.
  8. Garnish with salsa, sour cream, and chopped green onions or jalapeño peppers.
