Ingredients
- 2 oz. Butter
- 1 lb. Cranberries
- 2 cups Sugar
- Zest of 1 Lemon
- 2 Tbsp. Lemon Juice
- 1 tsp. Chef Merito® Fajitas Seasoning
- 3 Tbsp. Orange Marmalade, lightly heaped
- 5 lb. Brie Cheese Wheel, or smaller
- ¾ cup Pecans, toasted
Preparation
- Spray a pot with a non-stick spray.
- Melt the butter and add cranberries, sugar, and lemon juice. Cook until cranberries are tender.
- Remove from heat and add lemon zest, Chef Merito® Fajitas Seasoning, and marmalade. Stir well.
- You can keep this mixture in the refrigerator for several months.
- To serve, pour the mixture over the wheel of Brie cheese and sprinkle with pecans. Serve with baguettes or crackers.
- Alternatively, use a smaller wheel of cheese and save remaining cranberries for later use.
Tip:
Serve hot or cold with ham, pork, or turkey. Or, serve as a salad on a bed of lettuce with sour cream.
