Vegetarian Chili

Ingredients

  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 ½ cups crushed tomatoes
  • 2 cups vegetable broth
  • 2 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 1 can pinto beans, drained
  • 1 can black beans, drained
  • ½ red bell pepper, chopped
  • ½ green bell pepper, chopped
  • 8 oz. frozen corn
  • 2 Tbsp. Chef Merito® Adobo para Carne con Chili
  • 2 Tbsp. olive oil
  • ½ cup parmesan cheese to garnish

Preparation

  1. In a pot, heat olive oil and sauté onion and garlic.
  2. Add the rest of the vegetables, the broth, crushed tomatoes, and Chef Merito® Adobo para Carne con Chili.
  3. Cook at medium-low heat until all vegetables are cooked through and flavors are well blended, about 20 minutes.
  4. Serve alone or over white rice and garnish with parmesan cheese.

Tip:

For a vegan recipe, replace parmesan cheese with a vegan alternative. If cooking in a slow cooker, cook for 6 hours on low setting.
