Ingredients
- 2 tsp. Chef Merito® Fajitas Seasoning
- ¾ stick unsalted butter, melted
- 1 ½ cups yellow cornmeal
- 1 ¼ cups all-purpose flour
- 1/3 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 3/4 cups buttermilk
- 2 eggs
- 2 cups Monterey Jack cheese, shredded
- 1/2 red bell pepper, cut into 1” thin strips
- 1/2 green bell pepper, cut into 1” thin strips
- Spray oil for pan
Preparation
- Preheat oven to 400°F. Spray a 9” x 13” baking pan with oil.
- In a bowl, mix cornmeal, flour, sugar, baking powder, baking soda, and Chef Merito® Fajitas Seasoning.
- In a separate bowl, whisk together buttermilk, butter, and eggs.
- Pour the wet mixture over the dry mixture and stir until blended. Add cheese and mix.
- Transfer to the baking pan. Decorate with red and green bell pepper strips over the top.
- Bake until golden brown along the edges and a wooden skewer inserted in the center comes out moist but clean, approximately 20 to 25 minutes.
- Let rest for 5 minutes, then remove from pan and let cool on a wire rack.
- Cut into individual portions and serve warm with butter if preferred. Enjoy!
