Garlic Pumpkin Tacos

Ingredients

  • 4 cups pumpkin, peeled and diced into 1” pieces
  • 2 Tbsps. olive oil
  • 1 green bell pepper, thinly sliced
  • ½ head of purple cabbage, thinly sliced
  • ½ cup avocado salsa
  • ½ cup sour cream or crema Mexicana
  • 1 Tbsp. Chef Merito® Garlic Salt
  • 1 Tbsp. Chef Merito® Jugo de Limon
  • 8 flour tortillas or as needed
  • Cilantro and Pepitas to garnish

Preparation

  1. Preheat oven to 380ºF.
  2. Place pumpkin in a greased cookie sheet or use a non-stick silicone mat.
  3. Add olive oil and season with Chef Merito® Garlic Salt. Mix until pumpkin is completely coated and arrange in a single layer.
  4. Roast in the oven for 20 minutes or until soft and golden brown.
  5. Place cabbage in a bowl and season with olive oil, Chef Merito® Jugo de Limon, and salt to taste. Reserve.
  6. Serve roasted pumpkin over warmed tortillas, top with cabbage, avocado salsa, sour cream, and pepitas. Garnish with cilantro!
