Ingredients
- 4 cups pumpkin, peeled and diced into 1” pieces
- 2 Tbsps. olive oil
- 1 green bell pepper, thinly sliced
- ½ head of purple cabbage, thinly sliced
- ½ cup avocado salsa
- ½ cup sour cream or crema Mexicana
- 1 Tbsp. Chef Merito® Garlic Salt
- 1 Tbsp. Chef Merito® Jugo de Limon
- 8 flour tortillas or as needed
- Cilantro and Pepitas to garnish
Preparation
- Preheat oven to 380ºF.
- Place pumpkin in a greased cookie sheet or use a non-stick silicone mat.
- Add olive oil and season with Chef Merito® Garlic Salt. Mix until pumpkin is completely coated and arrange in a single layer.
- Roast in the oven for 20 minutes or until soft and golden brown.
- Place cabbage in a bowl and season with olive oil, Chef Merito® Jugo de Limon, and salt to taste. Reserve.
- Serve roasted pumpkin over warmed tortillas, top with cabbage, avocado salsa, sour cream, and pepitas. Garnish with cilantro!
