Lemon Pepper Muffins

Ingredients

  • 1½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ tsp. baking soda
  • 1¼ tsp. Chef Merito® Lemon Pepper Seasoning
  • 2 eggs
  • ½ tsp. vanilla extract
  • ½ cup plain yogurt
  • Zest of 1 lemon
  • 2 Tbsp. Chef Merito® Lime Juice or fresh lemon juice
  • ½ cup (1 stick) unsalted butter, melted
  • 1/3 cup all-purpose flour (optional)
  • 1/3 cup granulated sugar (optional)
  • 2 Tbsp. cold butter, cubed (optional)

Preparation

  1. Preheat oven to 350ºF and line 12 muffin cups with paper liners.
  2. In a medium bowl, combine the flour, sugar, baking soda, and Lemon Pepper Seasoning.
  3. In another bowl, whisk the eggs, vanilla extract, yogurt, lemon zest, lime juice, and melted butter until smooth (about 30 seconds).
  4. With a spatula, gently fold in the wet ingredients to the flour mixture. Do not overmix. The batter should be thick and lumpy.
  5. For the streusel (optional): In a small bowl, combine flour and sugar. Cut in butter with a fork until the mixture resembles crumbs.
  6. Fill each muffin cup ¾ full of batter and sprinkle 1 Tbsp. of streusel over each, if desired.
  7. Bake for 20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Serve warm.
