Ingredients
- 1½ cups all-purpose flour
- 1 cup granulated sugar
- ½ tsp. baking soda
- 1¼ tsp. Chef Merito® Lemon Pepper Seasoning
- 2 eggs
- ½ tsp. vanilla extract
- ½ cup plain yogurt
- Zest of 1 lemon
- 2 Tbsp. Chef Merito® Lime Juice or fresh lemon juice
- ½ cup (1 stick) unsalted butter, melted
- 1/3 cup all-purpose flour (optional)
- 1/3 cup granulated sugar (optional)
- 2 Tbsp. cold butter, cubed (optional)
Preparation
- Preheat oven to 350ºF and line 12 muffin cups with paper liners.
- In a medium bowl, combine the flour, sugar, baking soda, and Lemon Pepper Seasoning.
- In another bowl, whisk the eggs, vanilla extract, yogurt, lemon zest, lime juice, and melted butter until smooth (about 30 seconds).
- With a spatula, gently fold in the wet ingredients to the flour mixture. Do not overmix. The batter should be thick and lumpy.
- For the streusel (optional): In a small bowl, combine flour and sugar. Cut in butter with a fork until the mixture resembles crumbs.
- Fill each muffin cup ¾ full of batter and sprinkle 1 Tbsp. of streusel over each, if desired.
- Bake for 20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Serve warm.
