Ingredients
- 1 pumpkin (3 pounds)
- 4 tbsp extra virgin olive oil
- Several sprigs of thyme
- 2 tbsp pumpkin seeds
- 2 tsp Chef Merito® Fajitas seasoning
- 2 tablespoons sour cream
- Cilantro leaves
Preparation
- Scoop out the seeds and fibers from the pumpkin.
- Cut pumpkin into medium/thick wedges and place them skin side down in a roasting pan.
- Drizzle the wedges with olive oil, scatter the thyme and pumpkin seeds. Season with Chef Merito® Fajitas seasoning.
- Bake in a preheated oven at 425°F for 40-45 minutes until wedges are tender and roasted.
- Serve with sour cream and cilantro leaves.
