Mexican Street Corn

Ingredients

  • 4 ears corn, husks removed
  • ¼ cup melted butter
  • ¼ cup mayonnaise
  • ½ cup grated Cotija cheese
  • 1 lime, quartered
  • Chef Merito® Sal, Chile y Limón to taste
  • 4 corn skewers

Preparation

  1. Preheat outdoor grill to medium-high heat.
  2. Remove corn husks and clean well, cutting any cob that doesn’t have kernels.
  3. Grill corn until charred on all sides, about 7-10 minutes, depending on grill heat.
  4. Insert a skewer into each ear of corn and spread mayonnaise on them.
  5. Sprinkle with Cotija cheese and Chef Merito® Sal, Chile y Limón to taste.
  6. Drizzle melted butter and serve with a lime wedge.
  7. Enjoy!
