Chef Merito Crab Cakes

Ingredients

  • 1 lb. crab meat
  • 1 ½ cup Chef Merito® Bread Crumbs
  • 2 tsp. Chef Merito® Shrimp Seasoning
  • 1 cup corn cereal, crushed
  • 2 spring onions, finely chopped
  • 1 red bell pepper, finely chopped
  • ¼ cup mayonnaise
  • Oil for frying

Preparation

  1. In a shallow bowl, mix 1 cup Chef Merito® Bread Crumbs with 1 cup crushed corn cereal. Reserve.
  2. In a second bowl, combine all the remaining ingredients and form patties about 3” in size.
  3. Heat ½ cup oil in a large skillet over medium-high heat.
  4. Roll the patties in the flour-corn cereal mixture and fry them until golden brown, about 4-5 minutes per side, turning them carefully.
  5. Remove from heat and place on a plate lined with paper towels. Serve with your preferred sauce.
