Chicken Taquitos

Ingredients

  • 12 - 6” fresh Corn Tortillas
  • ½ lb. Chicken Breast
  • 2 cups Mozzarella Cheese or Pepper Jack Cheese, shredded
  • 2 tsp. Chef Merito® Chicken Seasoning
  • Spray oil
  • Oil for frying, enough to cover 1” of the pan
  • 6 toothpicks

Preparation

  1. Heat a shallow pan over medium-high heat. Spray the pan with cooking oil to prevent the chicken from sticking.
  2. Season the chicken breast with 2 tsp. Chef Merito® Chicken Seasoning and cook over medium heat until the juices run clear.
  3. Remove the chicken from heat and let it rest for 10 minutes until it cools. Using a fork, shred the chicken breast and set aside.
  4. Heat enough cooking oil in the pan to fry the taquitos.
  5. On a flat surface, place one tortilla at a time. Spread 1 Tbsp. of chicken and 1 Tbsp. of shredded cheese in the center, then roll tightly. Use a toothpick cut in half to secure the taquito in place.
  6. Fill and roll all the tortillas.
  7. Place a few taquitos at a time in the pan and fry until golden brown.
  8. Remove from heat and place on a shallow plate lined with paper towels to absorb excess oil.
  9. Serve with your favorite side of guacamole and salsa.
