Grilled Steak Fajitas

Ingredients

  • 1 lb. flat iron steak, ¾ inch thick
  • 2 tsp. Chef Merito® Steak & Meat Seasoning or Chef Merito® Fajitas Seasoning
  • 1 bell pepper (red, orange, yellow, and/or green), sliced ½ inch wide
  • 2 yellow onions, sliced ½ inch thick
  • 1 Tbsp. olive oil
  • 8 (6-inch) flour tortillas

Preparation

  1. Coat the grill rack with non-stick cooking spray. Preheat the grill to medium heat (300°F-350°F).
  2. Season the steak with Chef Merito® Steak & Meat Seasoning in a Ziplock® bag and shake to cover the meat completely.
  3. Brush the onions and bell pepper with olive oil and place them directly on the grill. Cook until tender.
  4. Stack the tortillas and wrap them loosely in foil; set aside.
  5. Grill the steak, covered, for 5-8 minutes per side or until the desired doneness (145°F for medium-rare).
  6. During the last 5 minutes of grilling, place the foil packet on the grill to warm the tortillas.
  7. Transfer the steak and vegetables to a cutting board; let them stand for 3 minutes.
  8. Thinly slice the steak against the grain; cut the pepper and onions into thinner slices.
  9. Serve with the warmed tortillas.
