Mole de Olla

Ingredients

  • 2 lbs. "Chamorro" Beef Shank, cubed
  • 2 Zucchinis
  • 3 Carrots
  • 1 Chayote
  • 2 Corn
  • 2 Tomatoes
  • ½ Bunch Cilantro
  • ½ Onion, chopped
  • 2 Limes
  • 1 can Tomato Puree
  • 1 Cup Chef Merito® Meat Marinade

Preparation

  1. Marinate the meat with the Chef Merito® Meat Marinade for 30 minutes.
  2. In a large pot, bring a gallon of water to a boil.
  3. In a blender, mix a cup of the tomato puree with 2 tomatoes. Add this mixture to the pot.
  4. Once the water is boiling, add the marinated meat and maintain a low boil.
  5. Chop the zucchinis, carrots, chayote, and corn, then add them to the pot. Cook until all ingredients are tender and fully cooked.
  6. Chop the onion and cilantro, and serve them with the soup, along with lime wedges for added flavor.
