Ingredients
- 3 lbs. pork shoulder, cubed
- 2 ½ tbsp. Chef Merito® Steak & Meat Seasoning
- 4 tomatoes
- 4 garlic cloves, chopped
- 12 oz. chipotle in adobo sauce
- 1 white onion, chopped
- ¼ cup apple cider vinegar
- 2 tsp. Mexican oregano
- ¼ tsp. ground cloves
- 2 oranges, sliced
- 3 bay leaves
- ½ tbsp. salt
- 1 tsp. Chef Merito® Black Pepper
- 1 tbsp. sugar
Garnish
- ½ cup cilantro, chopped
- 1 cup white onion, chopped
- 1 cup green or red salsa
- Salt and pepper to taste
Preparation
- Boil tomatoes, onion, and two garlic cloves for 15 minutes. Remove from the pot and blend the mixture, then set it aside.
- In a deep pot, place the pork and add the blended mixture along with the meat seasoning, the remaining two chopped garlic cloves, chopped onion, chipotle, vinegar, oregano, ground cloves, bay leaves, salt, pepper, sugar, and enough water to submerge the pork.
- Bring to a simmer and cover for 3 to 4 hours, stirring often to prevent sticking. Adjust salt and pepper to taste as it cooks.
- Spoon the meat onto warm tortillas and top with your favorite salsa, cilantro, and chopped onions.
