Ingredients
- 8 slices bread of choice (sourdough suggested)
- 16 slices Mozzarella cheese
- 1 lb. medium shrimp, peeled and deveined
- 8 Tbsp. basil pesto
- ½ cup sundried tomatoes
- 1 Tbsp. Chef Merito® Shrimp Seasoning
- 1 Tbsp. Olive oil
- 4 Tbsp. butter
Preparation
- In a skillet, heat olive oil and cook shrimp seasoned with Chef Merito® Shrimp Seasoning for about 2-3 minutes per side until they change color. Reserve.
- Spread pesto on one side of the bread, then top with sundried tomatoes, shrimp, and cheese. Close the sandwich and press firmly on the top.
- In the skillet, heat about ½ Tbsp. of butter over medium-low heat until just melted.
- Place your sandwich in the skillet and spread more butter over the top of the sandwich.
- Cook on each side for about 5-6 minutes on low heat, or until each side is a nice crispy golden brown.
