Ingredients
Nachos Ingredients:
- 2 bags of sweet potato chips
- 1 (16 oz.) can black beans
- 1 avocado, diced
- ½ cup pico de gallo
- 1 cup corn
- Optional to garnish: cilantro, green onions, or jalapeño peppers, chopped
Chef Merito Nacho Sauce:
- 2 Tbsp. flour
- 2 Tbsp. butter
- ½ tsp. Chef Merito® Turkey Seasoning
- 1 cup whipping cream
- 1½ cup Sharp Cheddar Cheese
Preparation
- In a saucepan, mix butter and flour on low heat until pasty, making a roux. Once the roux is done, add whipping cream, cheddar cheese, and Chef Merito® Turkey Seasoning. Mix on medium to low heat until cheese has completely melted and has come to a simmer. Remove from heat.
- In a skillet, pour in the black beans and mash with a potato masher. Cook until warm.
- Arrange sweet potato chips on a platter. Spoon a generous amount of the cheese sauce over the chips, then cover with beans, pico de gallo, and avocado.
- Garnish with salsa, sour cream, and green onions or jalapeño peppers. Enjoy!
Tip
Make sweet potato chips at home by thinly slicing the sweet potatoes with a mandolin. Season with olive oil and Chef Merito® Turkey Seasoning to taste. Arrange on a baking sheet in a single layer and bake at 380ºF until crispy, approximately 20 minutes.
