Spicy Cranberries & Brie

Ingredients

  • 2 oz. Butter
  • 1 lb. Cranberries
  • 2 cups Sugar
  • Zest of 1 Lemon
  • 2 Tbsp. Lemon Juice
  • 1 tsp. Chef Merito® Fajitas Seasoning
  • 3 Tbsp. Orange Marmalade, lightly heaped
  • 5 lb. Brie Cheese Wheel, or smaller
  • ¾ cup Pecans, toasted

Preparation

  1. Spray a pot with a non-stick spray.
  2. Melt the butter and add cranberries, sugar, and lemon juice. Cook until cranberries are tender.
  3. Remove from heat and add lemon zest, Chef Merito® Fajitas Seasoning, and marmalade. Stir well.
  4. You can keep this mixture in the refrigerator for several months.
  5. To serve, pour the mixture over the wheel of Brie cheese and sprinkle with pecans. Serve with baguettes or crackers.
  6. Alternatively, use a smaller wheel of cheese and save remaining cranberries for later use.

Tip:

Serve hot or cold with ham, pork, or turkey. Or, serve as a salad on a bed of lettuce with sour cream.
