Spinach Salad

Ingredients

  • 4 cups baby spinach
  • 8 grape or cherry tomatoes, cut in quarters
  • ¼ cup red onion, finely chopped
  • 1 cup crumbled goat or feta cheese
  • 2 Tbsps. olive oil or vegetable oil to taste
  • 1 Tbsp. Chef Merito® Lime juice
  • 1 tsp. Chef Merito® Sal, Chile y Limón, or to taste

Preparation

  1. In a small bowl, mix olive oil, Chef Merito® Lime juice, and Chef Merito® Sal, Chile y Limón. Reserve.
  2. Remove longer stems of spinach, wash, and pat dry.
  3. Place spinach in a bowl big enough for all ingredients.
  4. Cut tomatoes in quarters and add to spinach.
  5. Add onion, cheese, dressing, and mix.
  6. Serve with warm tortilla chips and enjoy!
