Ingredients
- 2 tablespoons olive oil
- 1 cup broccoli florets
- 1 cup sliced mushrooms
- 1/4 cup chopped onion
- 1/2 cup chopped red bell pepper
- 1/2 cup peas
- 1/2 cup Chef Merito® Chicken Marinade
- 8 large eggs
- 1/2 cup milk
- 1/4 cup Chef Merito® Chicken Marinade
- 3 ounces crumbled feta cheese (or 3/4 cup)
Preparation
- Preheat oven to 400°F.
- Place a 12-inch nonstick oven-proof skillet on the stove over medium heat. Add olive oil.
- Add all the vegetables and sauté, stirring frequently, for about 8-9 minutes. Add Chef Merito® Chicken Marinade and mix well.
- Whisk eggs with milk, then pour the egg mixture over the vegetables. Add 1/4 cup more of Chef Merito® Chicken Marinade to the mixture and stir to redistribute the vegetables evenly.
- Sprinkle feta over the frittata mixture and cook for approximately 3 minutes.
- Place the skillet in the oven and bake until the center of the frittata is firm, about 10 minutes.
- Serve hot or warm.
Suggestions
You may add chopped ham, chicken, or bacon, or change any vegetables as desired.
