Vegetable Frittata

Ingredients

  • 2 tablespoons olive oil
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 1/4 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup peas
  • 1/2 cup Chef Merito® Chicken Marinade
  • 8 large eggs
  • 1/2 cup milk
  • 1/4 cup Chef Merito® Chicken Marinade
  • 3 ounces crumbled feta cheese (or 3/4 cup)

Preparation

  1. Preheat oven to 400°F.
  2. Place a 12-inch nonstick oven-proof skillet on the stove over medium heat. Add olive oil.
  3. Add all the vegetables and sauté, stirring frequently, for about 8-9 minutes. Add Chef Merito® Chicken Marinade and mix well.
  4. Whisk eggs with milk, then pour the egg mixture over the vegetables. Add 1/4 cup more of Chef Merito® Chicken Marinade to the mixture and stir to redistribute the vegetables evenly.
  5. Sprinkle feta over the frittata mixture and cook for approximately 3 minutes.
  6. Place the skillet in the oven and bake until the center of the frittata is firm, about 10 minutes.
  7. Serve hot or warm.

Suggestions

You may add chopped ham, chicken, or bacon, or change any vegetables as desired.
