Ingredients
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 ½ cups crushed tomatoes
- 2 cups vegetable broth
- 2 carrots, peeled and chopped
- 3 celery stalks, chopped
- 1 can pinto beans, drained
- 1 can black beans, drained
- ½ red bell pepper, chopped
- ½ green bell pepper, chopped
- 8 oz. frozen corn
- 2 Tbsp. Chef Merito® Adobo para Carne con Chili
- 2 Tbsp. olive oil
- ½ cup parmesan cheese to garnish
Preparation
- In a pot, heat olive oil and sauté onion and garlic.
- Add the rest of the vegetables, the broth, crushed tomatoes, and Chef Merito® Adobo para Carne con Chili.
- Cook at medium-low heat until all vegetables are cooked through and flavors are well blended, about 20 minutes.
- Serve alone or over white rice and garnish with parmesan cheese.
Tip:
For a vegan recipe, replace parmesan cheese with a vegan alternative. If cooking in a slow cooker, cook for 6 hours on low setting.
