Ingredients
- ½ head Boston lettuce
- 2 spring onions, sliced
- 1 stalk celery, sliced
- ½ small red bell pepper, sliced
- 1 Tbsp. mayonnaise
- 1 Tbsp. sour cream
- 1 Tbsp. whipping cream
- 1 Tbsp. dill pickle, chopped
- 1 Tbsp. dill pickle juice
- 1 tsp. horseradish
- ½ tsp. sugar
- ½ tsp. Chef Merito® Fajitas Seasoning
Preparation
- Use for a salad or as a main course.
- Put lettuce on two plates. Divide onion, celery, and bell pepper on top. Cover with plastic and refrigerate.
- Mix all other ingredients together and just before serving, pour dressing on.
Summer Salad for Two
Put 8 oz. crabmeat, shrimp, or chicken strips on top of the salad and serve with French bread.
Tip
For a Valentine’s Day salad, cut out two hearts from the red bell pepper and decorate the top. Use the green part of a spring onion to make arrows. Remember…love goes through the stomach!
