Chicken Lettuce Wraps

Ingredients

  • 1 lb. chicken breasts, cubed ½ inch, boneless, skinless
  • 3 Tbsp. Chef Merito® Adobo para Carne al Pastor
  • 3 roma tomatoes, diced
  • 3 Tbsp. red onion, finely chopped
  • 1 Tbsp. olive oil
  • ¼ cup green onions, thinly sliced
  • 1 (15 oz.) can black beans, drained
  • 1 (8.75 oz.) can corn kernels, drained
  • 2 romaine lettuce hearts or iceberg lettuce

Preparation

  1. In a medium bowl, combine chicken and Chef Merito® Adobo para Carne al Pastor. Cover and refrigerate for 15 minutes.
  2. In a small bowl, combine diced tomatoes and chopped red onion. Set aside.
  3. Heat oil in a large saucepan over medium-high heat, and sauté the marinated chicken for 10 minutes until the liquid has reduced.
  4. Add green onions, beans, and corn. Continue cooking for an additional 30 seconds.
  5. Remove from heat and allow the mixture to rest for 5 minutes.
  6. Spoon the warm chicken mixture onto lettuce leaves and top with the tomato and onion mixture.
