Macadamia Mahi Mahi

Ingredients

  • 4 (6 oz.) fresh mahi-mahi fillets
  • ¾ cup macadamia nuts, chopped
  • ½ cup Chef Merito® Seasoned Bread Crumbs*
  • 1 tsp. Chef Merito® Fish Seasoning
  • 1 Tbsp. parsley, chopped
  • 4 Tbsp. olive oil

Preparation

  1. Preheat the oven to 425°F. Line a baking sheet with aluminum foil.
  2. In a small bowl, combine chopped macadamia nuts, Chef Merito® Seasoned Bread Crumbs, Chef Merito® Fish Seasoning, parsley, and 2 Tbsp. of olive oil.
  3. Place mahi-mahi fillets onto the baking sheet and lightly brush the tops with olive oil.
  4. Pat the macadamia and breadcrumb mixture on top of each fillet (about ¼ cup of mixture for each).
  5. Bake for 10-12 minutes. Allow the fillets to rest for 5 minutes before serving.

Chef Tip: Substitute with Chef Merito® Spicy Breadcrumbs for more heat.
